TAHINI GINGER CHOCOLATE CHIP COOKIES
1 cup, plus 2 tbsp (150 grams) All Purpose Flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
4 ounces (113 grams) unsalted butter at room temperature
½ cup tahini
¾ cup (150 grams) brown sugar
3 tbsp Colorado Hemp Honey Ginger Soothe™
1 egg
1 egg yolk
1 tsp vanilla
250 grams chocolate chips
Sesame seeds, to coat
Preheat oven to 350℉.
In a medium bowl, whisk together dry ingredients.
Using an electric mixer, cream together butter, sugar, honey, and tahini until fluffy about five minutes. Add egg, egg yolk, and vanilla. Mix in dry ingredients until well combined. Fold in chocolate chips.
Cover dough with plastic wrap and refrigerate for 4 hours, or overnight.
Line baking sheet with parchment paper or nonstick baking mat. Using a spoon or medium cookie scoop, portion dough into 12-18 balls. Space cookies three inches apart as dough will spread as it bakes. Place baking sheet in oven and bake for 14-16 minutes. Cookies should be lightly brown around the edges, but soft in center. Let cool on the baking sheet for 15 minutes before transferring to a wire cooling rack to finish cooling.
