2 sheets of matzo
2 large eggs
Salt and pepper
Vegetable oil or butter for pan
Colorado Hemp Honey for topping
Using your hands, break matzo into small pieces; place in sieve over similarly sized bowl. Cover with very hot water. Soak the matzo in water for about 30 seconds (or longer if you prefer a chewier matzo), then drain. Beat eggs in another medium bowl; season with salt and pepper. Add drained matzo; mix until combined and matzo is well incorporated. Heat oil or butter in a large skillet over medium-high heat. Spoon 1/4-cupfuls of batter into skillet, making 4 pancakes. Fry, turning once, until golden and just cooked through, about 1 minute per side. Serve with Colorado Hemp Honey as a topping, jam, yogurt, or whatever you like!
