Hemp Honey Candied Citrus Peels

A colorful way to celebrate the flavors of the holidays, candied citrus peels are gluten-free, paleo and loaded with natural Vitamin C and bioflavonoids to help keep you healthy this season!
Hemp Honey Candied Citrus Peels
2 navel oranges
1 lemon
1 cup Raw Relief Colorado Hemp Honey
1 cup water
Remove citrus (can be a combination of lemons, oranges, and grapefruit) peels by first cutting the end with a knife, careful not to cut into the flesh of the citrus. Placing the citrus on the flat cut end, continue to cut the peel away from the flesh around the entire circumference of the fruit, careful to only cut the peel and the pith away from the fruit.
Cut the peels into 1/4 inch strips.
In a saucepan large enough to cover the peels with water, boil the peels for 20 minutes. Drain the peels and let them dry.
In a large saute pan, boil 1 cup honey and 1 cup water, reducing heat if mixture starts to boil, for five minutes. Reduce heat to medium, and cook for another five minutes until thickened.
Add the peels to the pan, and cook over low heat for approximately 45 minutes, stirring occasionally and making sure not to burn the peels and honey mixture. The peels will be ready when they are translucent.
Remove from heat and turn the peels onto a parchment paper lined baking sheet.
These can be used to garnish drinks or dipped in chocolate to make orangette, or baked into a holiday cake like stollen!
